Courgette and Lime Cake

Happy Tuesday! So for every other Sunday, I have the honour of baking a sweet treat for the cafe in my church which is great because not only am I contributing to the church itself by doing my little part, but this opportunity allows me to explore and experiment with new recipes.

My first experience of indulging on a courgette cake was back in Uni when my housemate baked a lovely batch that was also GF if I remember correctly. Similarly to carrot cake, I didn't exactly warm to the idea of a courgette cake at first but the bursts of the zesty lime truly ties this whole thing together so wonderfully.

Recipe: Chocolate Cake with Mascarpone icing

Happy Friday! Over on my Instagram (@kimkimipie) I posted a picture of this chocolate cake a few days ago so I thought I'd share the recipe with you today.

I followed Mary Berry's recipe, but I didn't fully commit as I altered the icing and filling to a mascarpone one as opposed to the double cream and apricot jam that Mez Bez has used. So I've only jazzed it up a little as I clearly love all the calories, but the sponge is super fudgey and the mascarpone compliments it so well. Oh, and did I mention that it's stupidly easy to make as well?

Baking Day





To be completely honest, I'm not entirely sure where my obsession with baking cakes has come from. I'm going to assume that it's come from watching my mum making beautiful creations in the kitchen from an early age but if you follow me on instagram (@kimkimipie) then I'm more than certain that I've bored you to death with my array of cakes, cookies and other calorie filled goodness that I've produced on a weekly basis.

After visiting Pettigrew Tea Rooms in Cardiff with a friend a few weeks ago, I engorged on their delicious slice of passion fruit, lime and coconut cake so I immediately searched for a recipe as soon as I got home. Alternatively, I was more drawn to this recipe of raspberry, lime and coconut cake from waitrose and I pretty much religiously followed their recipe step by step so feel free to have a mooch on their page if you want to bake this beautiful cake.

Easter Sunday


Just a quick post to say Happy Easter. Hope you're all having fun consuming copious amounts of chocolate like I am.
